- 2 cups all-purpose flour
- 1 cup canned pumpkin puree
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 cup chopped walnuts (optional)
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together all the dry ingredients.
- In another bowl, whisk together the pumpkin puree, melted butter, eggs, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients and mix until just combined.
- If using, fold in the chopped walnuts.
- Divide the dough in half and shape each half into a log on the prepared baking sheet.
- Bake for about 25-30 minutes or until firm to the touch.
- Remove from the oven and let cool for about 10 minutes. Slice the logs into individual biscotti and place them cut side down on the baking sheet.
- Return to the oven and bake for another 10-15 minutes, until golden and crisp.
- Let cool completely before serving.
