Pumpkin Biscotti

Ingredients

  • 2 cups all-purpose flour
  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together all the dry ingredients.
  3. In another bowl, whisk together the pumpkin puree, melted butter, eggs, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.
  5. If using, fold in the chopped walnuts.
  6. Divide the dough in half and shape each half into a log on the prepared baking sheet.
  7. Bake for about 25-30 minutes or until firm to the touch.
  8. Remove from the oven and let cool for about 10 minutes. Slice the logs into individual biscotti and place them cut side down on the baking sheet.
  9. Return to the oven and bake for another 10-15 minutes, until golden and crisp.
  10. Let cool completely before serving.

Notes

  • Drizzle with melted chocolate for an extra treat!
