  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix granulated sugar, brown sugar, pumpkin puree, oil, eggs, and vanilla until smooth.
  4. Combine the dry ingredients with the wet ingredients.
  5. Pour the batter into the prepared baking dish and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick comes out clean.
  7. Let the bars cool completely.
  8. For the frosting, beat cream cheese and butter until creamy, then mix in powdered sugar and vanilla.
  9. Spread the frosting over the cooled pumpkin bars and cut into squares.

Notes

  • The bars can be made a day ahead for better flavor.
