Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Place individual pineapple slices on a baking sheet and place a maraschino cherry in the center of each slice.
  7. Drop a spoonful of cookie dough over each pineapple slice, covering it completely.
  8. Bake for 12-15 minutes or until golden brown.
