Persian Noodle Soup

A warm and comforting Persian noodle soup that brings together flavorful ingredients for a satisfying bowl.

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 6 cups vegetable broth
  • 1 cup fresh parsley, chopped
  • 1 cup fresh cilantro, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 ounces noodles of your choice
  • 1 cup cooked chickpeas

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Stir in turmeric and cook for another minute.
  4. Add vegetable broth and bring to a boil.
  5. Reduce heat, add parsley, cilantro, salt, and pepper, simmer for 10 minutes.
  6. Add noodles and chickpeas, cook until noodles are tender.
  7. Serve hot and enjoy!

Notes

  • Feel free to add any other vegetables you have on hand.
  • For a heartier soup, add more noodles or beans.
