  • 1 cup cherry tomatoes
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, mix together the Parmesan cheese, breadcrumbs, garlic powder, and Italian seasoning.
  3. Beat the eggs in a separate bowl.
  4. Dip each chicken breast in the egg, then coat it in the Parmesan mixture.
  5. Place the coated chicken breasts on a sheet pan lined with parchment paper.
  6. In the same bowl used for the breadcrumbs, toss the cherry tomatoes with olive oil, salt, and pepper.
  7. Spread the tomatoes around the chicken on the sheet pan.
  8. Bake for 25-30 minutes or until the chicken is cooked through and golden.
