  • 4 large eggs
  • 2 cups milk

  • 2 teaspoons pumpkin pie spice
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans (optional)

Instructions

  1. In a large bowl, whisk together the pumpkin puree, eggs, milk, vanilla, pumpkin pie spice, brown sugar, and salt.
  2. Add the cubed French bread to the bowl and stir to coat the bread in the mixture.
  3. Transfer the mixture to a greased baking dish and top with pecans if using.
  4. Cover and refrigerate overnight.
  5. Preheat the oven to 350°F (175°C) in the morning.
  6. Bake the casserole uncovered for 45-50 minutes or until golden brown and set.
  7. Let cool slightly before serving.
