  • 2 large eggplants
  • 4 medium potatoes
  • 1 pound ground turkey
  • 6 slices turkey bacon
  • 1 cup chicken ham, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14 ounces) crushed tomatoes
  • 2 teaspoons dried oregano
  • 1 teaspoon cinnamon
  • 2 cups béchamel sauce
  • 1 cup grated cheese (Parmesan or Kefalotyri)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the eggplants and potatoes, then sprinkle with salt and let sit for 30 minutes.
  3. In a skillet, cook the turkey bacon until crispy. Remove and set aside.
  4. In the same skillet, sauté onions and garlic until translucent.
  5. Add the ground turkey, chicken ham, and cook until browned.
  6. Stir in crushed tomatoes, oregano, and cinnamon. Simmer for 15 minutes.
  7. Layer the eggplant, potatoes, and meat sauce in a baking dish.
  8. Top with béchamel sauce and grated cheese.
  9. Bake for 45 minutes or until the top is golden brown.
  10. Let it cool for 10 minutes before serving.

Notes

  • For a vegetarian option, replace the meat with lentils.
  • Allow the moussaka to sit for a bit before cutting for easier serving.
