  • 4 large potatoes
  • 6 slices turkey bacon
  • 1 medium onion
  • 2 cloves garlic
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup green onions

Instructions

  1. Cook the turkey bacon in a large pot until crispy. Remove and chop.
  2. In the same pot, sauté the onion and garlic until softened.
  3. Add the diced potatoes and chicken broth. Bring to a boil, then simmer until potatoes are tender.
  4. Mash the potatoes slightly for a thicker texture.
  5. Stir in the heavy cream, salt, and pepper. Cook for an additional 5 minutes.
  6. Serve hot, garnished with chopped turkey bacon and green onions.

Notes

  • For a thicker soup, blend a portion of the soup and mix back in.
