One Pot Chicken Dumpling Soup

  • 4 cups chicken broth
  • 2 cups mixed vegetables

  • 1 tablespoon baking powder

  • 1 cup milk
  • 2 tablespoons butter

Instructions

  1. In a large pot, add chicken broth and bring to a simmer.
  2. Add the chicken breast and cook until no longer pink, then remove and shred.
  3. Add mixed vegetables to the broth and cook until tender.
  4. In a bowl, mix flour, baking powder, salt, milk, and melted butter to form dumpling dough.
  5. Drop spoonfuls of the dumpling dough into the simmering soup.
  6. Cover and cook for about 15 minutes until dumplings are fluffy.
  7. Return shredded chicken to the pot and mix well before serving.
