  • 2 cups corn, fresh or frozen
  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a pot over medium heat and sauté the onions, bell pepper, and garlic until translucent.
  2. Add the corn and sauté for another 5 minutes.
  3. Pour in the vegetable broth, bring to a boil, then reduce to a simmer.
  4. Add the shrimp and cook until they turn pink.
  5. Stir in the heavy cream and Cajun seasoning, simmer for an additional 10 minutes.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a spicier bisque, add more Cajun seasoning.
