Mystical Witch Soup

A deliciously warming soup that will conjure comfort on chilly nights.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 can (15 ounces) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 cup green beans, chopped
  • 1 cup kidney beans, drained and rinsed
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic; sauté until translucent.
  3. Stir in the broth, carrots, celery, diced tomatoes, thyme, and basil.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Add green beans and kidney beans; cook for another 10 minutes.
  6. Season with salt and pepper to taste before serving.
