Mouthwatering One Pot Lasagna Soup

A delicious and comforting one pot lasagna soup featuring turkey bacon for a delightful twist.

  • 1 pound ground turkey
  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 8 ounces lasagna noodles, broken
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and set aside.
  2. In the same pot, sauté the onion and garlic until translucent.
  3. Add the ground turkey to the pot and cook until browned.
  4. Stir in the tomato sauce, diced tomatoes, chicken broth, broken lasagna noodles, Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer until noodles are tender.
  6. Stir in ricotta cheese until well combined.
  7. Serve hot, garnished with mozzarella and Parmesan cheese, and crumbled bacon on top.

  • For added flavor, use fresh herbs like basil or oregano.
  • This soup can be made ahead of time and reheated.
