1 cup crushed pineapple, drained
1/4 cup brown sugar
1/4 cup butter
1 package cream cheese, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
1 cup crushed graham crackers
2 tablespoons melted butter
Instructions
Preheat the oven to 350°F (175°C).
In a skillet, melt butter and brown sugar over medium heat, then stir in crushed pineapple and cook until slightly caramelized.
In a mixing bowl, combine cream cheese, granulated sugar, and vanilla extract. Beat until smooth, then add eggs one at a time.
In a separate bowl, mix crushed graham crackers with melted butter until well combined.
Press the graham cracker mixture into the bottom of cupcake liners in a muffin tin.
Pour the cream cheese mixture over the crust and top with the pineapple mixture.
Bake for 20-25 minutes or until set, then let cool before serving.
