  • 1/4 cup brown sugar
  • 1/4 cup butter
  • 1 package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup crushed graham crackers
  • 2 tablespoons melted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, melt butter and brown sugar over medium heat, then stir in crushed pineapple and cook until slightly caramelized.
  3. In a mixing bowl, combine cream cheese, granulated sugar, and vanilla extract. Beat until smooth, then add eggs one at a time.
  4. In a separate bowl, mix crushed graham crackers with melted butter until well combined.
  5. Press the graham cracker mixture into the bottom of cupcake liners in a muffin tin.
  6. Pour the cream cheese mixture over the crust and top with the pineapple mixture.
  7. Bake for 20-25 minutes or until set, then let cool before serving.
