Mini Neapolitan Bundt Cakes

  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup strawberry puree
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream the butter and sugar until fluffy.
  4. Add eggs one at a time, then stir in vanilla.
  5. Gradually add the dry mixture and milk, mixing until just combined.
  6. Divide the batter into three bowls. Color one with cocoa for chocolate, one with strawberry puree for the pink batter, and keep one white.
  7. Layer the batters in a greased bundt cake pan to achieve a marbled effect.
  8. Bake for 20-25 minutes or until a toothpick comes out clean.
  9. Let the cakes cool before removing from the pan.

  • For a richer flavor, try using dark cocoa powder.
