Mexican Street Corn Soup

A delicious and comforting Mexican Street Corn Soup recipe with a twist of turkey bacon.

Ingredients

  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups corn (fresh or frozen)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp fresh cilantro, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add the onion and cook until translucent.
  3. Add garlic and cook for an additional minute.
  4. Stir in the corn, chicken broth, chili powder, cumin, salt, and pepper. Bring to a boil.
  5. Reduce heat and simmer for 15 minutes.
  6. Blend the soup until smooth, then stir in the cream.
  7. Serve with crumbled turkey bacon and cilantro on top.

Notes

  • This soup can be made ahead of time and stored in the fridge.
  • For a spicier version, add jalapeños or hot sauce.
