Meatloaf with Mashed Potatoes

A delicious and easy recipe for meatloaf made with turkey and bacon, served with creamy mashed potatoes.

  • 1 pound ground turkey
  • 4 slices turkey bacon, chopped
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 egg
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground turkey, chopped turkey bacon, breadcrumbs, milk, egg, onion, garlic, Worcestershire sauce, salt, and pepper.
  3. Mix until just combined, then shape into a loaf shape and place in a greased baking dish.
  4. Bake in the preheated oven for 1 hour or until cooked through.
  5. While the meatloaf is baking, prepare the mashed potatoes by boiling peeled and chopped potatoes until tender. Drain, mash, and mix with butter, milk, salt, and pepper to taste.
  6. Serve slices of meatloaf with a generous side of mashed potatoes.

Notes

  • For extra flavor, add herbs like parsley or thyme to the meatloaf mix.
  • Leftover meatloaf makes great sandwiches.
