Meatball Soup

A warm and hearty meatball soup featuring savory turkey bacon and chicken ham, perfect for cold days.

Ingredients

  • 1 pound turkey bacon
  • 1 pound chicken ham
  • 1 cup diced onion
  • 2 cups diced carrots
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, add chicken ham, onions, and carrots; sauté until softened.
  3. Add garlic and cook for 1 minute.
  4. Pour in chicken broth and add diced tomatoes, thyme, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add spinach and the previously cooked bacon; heat through.
  7. Serve hot in bowls.

Notes

  • For extra flavor, consider adding herbs de Provence.
  • Serve with crusty bread for dipping.
