- 1 pound turkey bacon
- 1 pound chicken ham
- 1 cup diced onion
- 2 cups diced carrots
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 can diced tomatoes
- 2 cups spinach
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the turkey bacon until crispy. Remove and set aside.
- In the same pot, add chicken ham, onions, and carrots; sauté until softened.
- Add garlic and cook for 1 minute.
- Pour in chicken broth and add diced tomatoes, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add spinach and the previously cooked bacon; heat through.
- Serve hot in bowls.
