Loaded Potato Taco Bowl

A delicious and hearty Loaded Potato Taco Bowl featuring turkey bacon and chicken ham.

Ingredients

  • 2 large potatoes
  • 4 slices turkey bacon
  • 1 cup cooked chicken ham, diced
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Scrub and pierce the potatoes, then bake for 45-60 minutes until tender.
  3. Meanwhile, cook turkey bacon in a pan until crispy, then chop.
  4. Once potatoes are done, let them cool slightly, then slice in half and scoop out some flesh.
  5. Mix the scooped potato with chicken ham, cheese, paprika, garlic powder, salt, and pepper.
  6. Fill the potato halves with the mixture, top with bacon, and return to the oven for 10 minutes.
  7. Serve with sour cream on top.
