  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 cup sour cream
  • 1/2 cup shredded cheese
  • 1 avocado, diced
  • 1 lime, cut into wedges

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for about 45 minutes or until tender.
  3. In a pan, combine black beans, corn, chili powder, cumin, and garlic powder. Heat until warmed through.
  4. Once the potatoes are baked, cut them open and fluff the insides with a fork.
  5. Spoon the bean and corn mixture over the potatoes.
  6. Add sour cream, shredded cheese, and diced avocado on top.
  7. Serve with lime wedges on the side.
