Loaded Potato Taco Bowl

Ingredients

  • 4 large potatoes
  • 1 cup shredded cheese
  • 1 cup cooked ground beef
  • 1/2 cup sour cream
  • 1 avocado, diced
  • 1/4 cup chopped green onions
  • 1 tablespoon taco seasoning
  • 1/2 cup salsa

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and pierce the potatoes with a fork.
  3. Bake the potatoes for about 45 minutes or until tender.
  4. In a skillet, cook the ground beef and add taco seasoning.
  5. Once the potatoes are done, remove them from the oven and let them cool slightly.
  6. Cut them open and fluff the insides with a fork.
  7. Top the potatoes with seasoned ground beef, cheese, sour cream, diced avocado, and green onions.
  8. Serve with salsa on the side.

Notes

  • For extra flavor, add jalapeños or hot sauce.
  • This recipe can be adapted with different meats or made vegetarian.
