  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 lemon, juiced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery. Sauté until softened.
  2. Add garlic and cumin, cooking for another minute until fragrant.
  3. Stir in lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes.
