Lemon Lentil Soup

Ingredients

  • 1 cup lentils
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon turmeric
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Rinse and drain the lentils.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onions, carrots, and celery, sauté for about 5 minutes.
  4. Add garlic, cumin, and turmeric, cooking for 1 minute until fragrant.
  5. Stir in lentils and broth; bring to a boil.
  6. Reduce heat, cover, and simmer for 25-30 minutes until lentils are tender.
  7. Stir in lemon juice, salt, and pepper to taste.
  8. Serve hot, garnished with fresh parsley.

Notes

  • For a creamier soup, blend half of the soup and mix it back in.
  • Adjust lemon juice to taste for more or less zest.
