Lemon Lentil Soup

A warm and hearty lemon lentil soup that’s perfect for chilly evenings.

Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, celery, and garlic; sauté until soft.
  3. Stir in lentils, vegetable broth, cumin, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for about 30 minutes or until lentils are tender.
  5. Stir in lemon juice and adjust seasoning as needed.
  6. Serve warm.

Notes

  • For a creamier soup, blend a portion of the soup and stir it back in.
  • Add extra lemon for more brightness.
