Lemon Lentil Soup

  • 6 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric
  • 1 lemon, juiced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Rinse lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add onion, carrots, and celery, cooking until softened.
  4. Stir in garlic, cumin, and turmeric, cooking for another minute.
  5. Add lentils and vegetable broth, bringing to a boil.
  6. Reduce heat and simmer until lentils are tender, about 25-30 minutes.
  7. Stir in lemon juice, and season with salt and black pepper.
  8. Serve hot.
