Lemon Lentil Soup

Ingredients

  • 1 cup lentils
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 lemon, juiced and zested
  • 1 teaspoon dried thyme
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery. Cook until the vegetables are tender, about 5-7 minutes.
  2. Add the garlic, thyme, and cumin. Cook for another minute.
  3. Stir in the lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25-30 minutes or until lentils are tender.
  4. Remove from heat and stir in the lemon juice and zest. Season with salt and pepper to taste.
  5. Serve warm, garnished with fresh parsley.
