Lemon Lentil Soup

Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, diced
  • 2 stalks celery, diced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 6 cups vegetable broth
  • 1/4 cup fresh lemon juice
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onion, garlic, carrots, and celery. Sauté for about 5 minutes until softened.
  3. Stir in the cumin and turmeric. Cook for another minute.
  4. Add the lentils and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer for 25-30 minutes until lentils are tender.
  6. Stir in lemon juice and season with salt and pepper to taste.
