Lemon Lentil Soup

  • 1 onion, diced
  • 2 carrots, chopped
  • 3 cloves garlic, minced
  • 5 cups vegetable broth
  • 1 teaspoon cumin
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrots, and garlic, and sauté until softened.
  3. Add the lentils, cumin, and vegetable broth. Bring to a boil.
  4. Reduce heat and simmer until lentils are tender, about 20-25 minutes.
