Lemon Lentil Soup

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 6 cups vegetable broth
  • 1 lemon, juiced and zested
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion, carrots, and celery. Sauté until softened.
  3. Stir in garlic and cumin; cook for another minute.
  4. Add lentils and vegetable broth; bring to a boil.
  5. Reduce heat and simmer until lentils are tender, about 25 minutes.
  6. Stir in lemon juice and zest; season with salt and pepper.
  7. Serve warm.
