1 cup lentils
1 medium onion, diced
2 cloves garlic, minced
1 carrot, diced
1 celery stalk, diced
4 cups vegetable broth
1 bay leaf
1 teaspoon cumin
2 tablespoons lemon juice
Salt to taste
Fresh parsley for garnish
Instructions
Rinse the lentils under cold water and set aside.
In a large pot, heat some oil and sauté the onions, garlic, carrot, and celery until soft.
Add the lentils, vegetable broth, bay leaf, and cumin. Bring to a boil.
