- 2 cups sweet potato, peeled and sliced
- 2 cups butternut squash, peeled and sliced
- 1 cup carrots, grated
- 2 cups ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1 cup parmesan cheese, grated
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon nutmeg
- 9 lasagna noodles, cooked
- Preheat the oven to 375°F (190°C).
- In a pan, heat olive oil and sauté garlic until fragrant.
- In a baking dish, layer sweet potatoes, butternut squash, and carrots.
- Add a layer of ricotta cheese, followed by noodles.
- Repeat layers, finishing with mozzarella and parmesan on top.
- Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 15 minutes until golden.
- Let it cool for a few minutes before serving.
