Layered Sweet Potato Butternut Squash Carrot Lasagna

A delicious and hearty layered lasagna made with sweet potatoes, butternut squash, and carrots for a healthy twist.

Ingredients

  • 2 cups sweet potato, peeled and sliced
  • 2 cups butternut squash, peeled and sliced
  • 1 cup carrots, grated
  • 2 cups ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon nutmeg
  • 9 lasagna noodles, cooked

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, heat olive oil and sauté garlic until fragrant.
  3. In a baking dish, layer sweet potatoes, butternut squash, and carrots.
  4. Add a layer of ricotta cheese, followed by noodles.
  5. Repeat layers, finishing with mozzarella and parmesan on top.
  6. Cover with foil and bake for 30 minutes.
  7. Remove foil and bake for an additional 15 minutes until golden.
  8. Let it cool for a few minutes before serving.

Notes

  • This recipe is vegan if you substitute non-dairy cheese.
  • Can be prepared ahead and stored in the refrigerator.
