- 2 pounds beef chuck roast
- 1 tablespoon vegetable oil
- 1 cup soy sauce
- 1/2 cup brown sugar
- 1 tablespoon sesame oil
- 4 cloves garlic, minced
- 1 teaspoon ginger, grated
- 2 cups beef broth
- 1 onion, quartered
- 4 green onions, chopped
- 1 teaspoon black pepper
- 2 cups vegetables (carrots and potatoes), chopped
- Preheat your oven to 325°F (163°C).
- In a large Dutch oven, heat the vegetable oil over medium-high heat.
- Season the beef chuck roast with salt and black pepper, then sear it in the pot until browned on all sides.
- Remove the roast and set aside.
- In the same pot, add soy sauce, brown sugar, sesame oil, garlic, and ginger, stirring to combine.
- Add the beef broth, onion, and vegetables to the pot.
- Return the roast to the pot and cover.
- Bake in the preheated oven for about 3 hours, or until the meat is tender.
- Once done, remove the roast and let it rest before slicing. Serve garnished with chopped green onions.
