Korean Style Pot Roast is a delicious and easy-to-make comfort food that brings together the rich flavors of tender beef and savory spices.

  • 2 pounds beef chuck roast
  • 1 tablespoon vegetable oil
  • 1 cup soy sauce
  • 1/2 cup brown sugar
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 2 cups beef broth
  • 1 onion, quartered
  • 4 green onions, chopped
  • 1 teaspoon black pepper
  • 2 cups vegetables (carrots and potatoes), chopped

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a large Dutch oven, heat the vegetable oil over medium-high heat.
  3. Season the beef chuck roast with salt and black pepper, then sear it in the pot until browned on all sides.
  4. Remove the roast and set aside.
  5. In the same pot, add soy sauce, brown sugar, sesame oil, garlic, and ginger, stirring to combine.
  6. Add the beef broth, onion, and vegetables to the pot.
  7. Return the roast to the pot and cover.
  8. Bake in the preheated oven for about 3 hours, or until the meat is tender.
  9. Once done, remove the roast and let it rest before slicing. Serve garnished with chopped green onions.

Notes

  • This dish can be prepared ahead of time and reheated.
  • For a spicier flavor, add red pepper flakes to the sauce.
