  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup key lime juice
  • 2 large egg yolks
  • 1/2 teaspoon lime zest
  • 1 cup whipped cream
  • lime slices for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of mini muffin tins.
  3. Bake for 8-10 minutes until golden. Let cool.
  4. In another bowl, whisk together sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth.
  5. Pour the mixture into the cooled crusts and bake for an additional 15 minutes.
  6. Allow to cool, then refrigerate for at least 2 hours.
  7. Top with whipped cream and garnish with lime slices before serving.
