Jalapeno Popper Cucumber Salad

A refreshing take on the classic jalapeno popper, this salad combines the crunch of cucumbers with the creamy flavors of cheese and spices.

  • 2 large cucumbers
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 2 jalapenos, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lime juice

  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cut the cucumbers in half lengthwise and scrape out the seeds.
  2. In a medium bowl, mix the cream cheese, cheddar cheese, jalapenos, cilantro, lime juice, garlic powder, salt, and pepper until well combined.
  3. Fill each cucumber half with the cheese mixture.
