  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 stalks celery, chopped
  • 8 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 cups cooked chicken, shredded
  • 1 cup egg noodles
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, and sauté until softened.
  3. Add carrots and celery, cooking until slightly tender.
  4. Pour in chicken broth and bring to a boil.
  5. Add thyme, oregano, chicken, and egg noodles.
  6. Reduce heat and simmer for 10-15 minutes until noodles are cooked.
  7. Season with salt and pepper to taste, then serve hot.

Notes

  • For extra flavor, add a squeeze of lemon juice before serving.
  • Garnish with fresh parsley if desired.
