  • 4 slices turkey bacon
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 cup pasta of choice
  • 2 cups fresh spinach
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add onion and garlic to the pot, cooking until soft.
  3. Pour in chicken broth and add tomatoes, carrots, celery, basil, and oregano. Bring to a simmer.
  4. Stir in pasta and cook according to package instructions.
  5. Add spinach in the last few minutes of cooking, stirring until wilted.
  6. Season with salt and pepper, and add the crumbled bacon before serving.
