Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 6 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 2 cups spinach

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine ground beef, breadcrumbs, egg, garlic, and Italian seasoning. Mix well and form into meatballs.
  3. Place meatballs on a baking sheet and bake for 20 minutes.
  4. In a large pot, bring beef broth to a simmer. Add diced tomatoes, carrots, and celery.
  5. Add the baked meatballs to the pot and let simmer for 15 minutes.
  6. Stir in the spinach and cook for an additional 5 minutes.
