Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream together the oil and sugar until light and fluffy.
  4. Add the egg yolks and vanilla extract, mixing until well combined.
  5. Alternate adding the flour mixture and buttermilk to the creamed mixture. Stir in coconut and pecans.
  6. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold into the batter.
  7. Pour the batter evenly into prepared cake pans.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool in the pans for 10 minutes before transferring to wire racks to cool completely.
  10. Frost with cream cheese frosting once cooled.
