Hot Chocolate Doughnuts with Marshmallow Glaze

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a doughnut pan.
  2. In a large bowl, mix the dry ingredients: flour, sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed.
  5. Spoon the batter into the doughnut pan, filling each cavity about 2/3 full.
  6. Bake for 10-12 minutes, or until a toothpick inserted comes out clean.
  7. Let the doughnuts cool before adding the marshmallow glaze.
  8. To make the glaze, melt the marshmallows with a bit of butter in the microwave.
  9. Dip the tops of the cooled doughnuts into the glaze and let the excess drip off.
  10. Allow the glaze to set before serving.

Notes

  • For extra flavor, add a pinch of cinnamon to the batter.
