1 cup rolled oats
2 eggs
1 cup milk
1 tsp baking powder
1 tsp baking soda
¼ cup maple syrup
1 cup cooked turkey bacon, chopped
½ cup Greek yogurt
1 tsp vanilla extract
Instructions
Preheat the oven to 350°F (175°C) and grease a mini muffin tin.
In a large mixing bowl, combine whole wheat flour, rolled oats, baking powder, and baking soda.
In another bowl, whisk together eggs, milk, maple syrup, Greek yogurt, and vanilla extract.
Pour the wet ingredients into the dry ingredients and mix until just combined.
Fold in the chopped turkey bacon.
Fill each mini muffin cup about ¾ full with the batter.
