Healthy Roasted Butternut Squash

  • 1 medium butternut squash
  • 4 slices turkey bacon
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel, seed, and cube the butternut squash.
  3. In a large bowl, toss the butternut squash with olive oil, thyme, garlic powder, salt, and pepper.
  4. Spread the seasoned squash on a baking sheet.
  5. Crisp the turkey bacon in a skillet, then chop it into pieces and add it to the baking sheet.
  6. Roast the mixture in the oven for about 25-30 minutes, or until the squash is tender and caramelized.
  7. Serve warm, garnished with fresh herbs if desired.

Notes
