- 1/2 cup oats
- 2 tablespoons honey or maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup milk or almond milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup fruit (berries, banana, etc.)
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix the dry ingredients: flour, oats, baking powder, baking soda, and salt.
- In another bowl, whisk together the milk, egg, honey, and vanilla.
- Combine the wet and dry ingredients until just mixed, then fold in the fruit.
- Divide the batter into the muffin tin.
