  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix carrots, pineapple, sugars, and oil.
  3. Add eggs one at a time, mixing well after each addition.
  4. In another bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. If using, fold in walnuts.
  7. Pour the batter into a greased cake pan.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let cool completely before frosting.

Notes

  • For extra moisture, add 1/2 cup of unsweetened applesauce.
  • Decorate with shredded coconut for a tropical touch.
