Hash Brown Ham and Cheese Egg Cups

Delicious and easy-to-make Hash Brown Ham and Cheese Egg Cups, perfect for a quick breakfast or brunch.

  • 2 cups shredded hash browns
  • 1 cup diced ham
  • 1 cup shredded cheddar cheese
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 slices turkey bacon, cooked and crumbled

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine hash browns, ham, and cheese.
  3. Press the hash brown mixture into the bottom of a greased muffin tin.
  4. In another bowl, whisk together eggs, milk, salt, and pepper.
  5. Pour the egg mixture over the hash brown cups.
  6. Sprinkle crumbled turkey bacon on top.
  7. Bake for 20-25 minutes until eggs are set and hash browns are golden brown.
  8. Let cool for a few minutes before removing from the muffin tin.

Notes

  • For a spicier version, add diced jalapeños to the egg mixture.
