Grilled Peach and Arugula Summer Salad

A refreshing salad perfect for summer, featuring sweet grilled peaches, peppery arugula, and a light vinaigrette.

  • 2 ripe peaches
  • 4 cups arugula
  • 1/4 cup crumbled feta cheese
  • 1/4 cup walnuts, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the grill to medium heat.
  2. Slice the peaches in half and remove the pit.
  3. Brush the peach halves with olive oil.
  4. Grill the peaches cut side down for about 4-5 minutes until grill marks appear.
  5. In a large bowl, combine arugula, feta cheese, and walnuts.
