2 ears fresh corn
1 cup orzo pasta
1 red bell pepper, diced
1 cucumber, diced
1/4 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1/4 cup feta cheese, crumbled
2 tablespoons olive oil
1 tablespoon lime juice
Salt and pepper to taste
Instructions
Preheat the grill to medium-high heat.
Grill the corn for about 10 minutes, turning occasionally until charred.
Cook orzo according to package instructions, then drain and let cool.
In a large bowl, combine grilled corn kernels, cooked orzo, diced bell pepper, cucumber, red onion, cilantro, and feta cheese.
In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
Pour the dressing over the salad and toss well to combine.
