- 2 cups cooked quinoa
- 1 pound chicken breast
- 1 teaspoon olive oil
- 1 teaspoon oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 cup Kalamata olives
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- Preheat oven to 400°F (200°C).
- Combine olive oil, oregano, garlic powder, salt, and pepper in a small bowl.
- Brush the mixture over chicken breasts and bake for 20-25 minutes.
- Meanwhile, prepare quinoa as per package instructions.
- In a large bowl, mix quinoa with tomatoes, cucumber, olives, feta, and parsley.
- Once chicken is cooked, slice it and add it to the quinoa mixture.
