  • 2 cups cooked quinoa
  • 1 pound chicken breast
  • 1 teaspoon olive oil
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Combine olive oil, oregano, garlic powder, salt, and pepper in a small bowl.
  3. Brush the mixture over chicken breasts and bake for 20-25 minutes.
  4. Meanwhile, prepare quinoa as per package instructions.
  5. In a large bowl, mix quinoa with tomatoes, cucumber, olives, feta, and parsley.
  6. Once chicken is cooked, slice it and add it to the quinoa mixture.
  7. Toss everything together and serve.
