  • 300 ml boiling water
  • 1 teaspoon baking soda
  • 100 grams unsalted butter
  • 150 grams brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 180°C (350°F). Grease a baking dish.
  2. In a bowl, combine the chopped dates and boiling water. Stir in baking soda and let it sit.
  3. In a separate bowl, cream together the butter and brown sugar until fluffy.
  4. Add eggs and vanilla extract to the butter mixture, then mix well.
  5. Fold in the date mixture.
  6. Combine flour, baking powder, and salt, then fold gently into the wet ingredients.
  7. Pour the batter into the prepared baking dish and smooth the top.
  8. Bake for 30-35 minutes or until a skewer inserted comes out clean.
  9. Allow to cool before serving with toffee sauce.
