- 4 ears fresh corn, husked and cut off the cob
- 6 slices turkey bacon, chopped
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 small onion, diced
- 1 teaspoon garlic, minced
- Salt to taste
- Black pepper to taste
- In a large skillet, cook turkey bacon over medium heat until crisp. Remove and set aside.
- In the same skillet, add olive oil, diced onion, and bell pepper. Sauté until softened.
- Add the minced garlic and corn, and cook for another 5 minutes.
- Stir in the turkey bacon, season with salt and black pepper, and heat through.
- Serve warm as a side dish.
