Fresh Corn and Bacon Side Dish

A delightful blend of fresh corn and turkey bacon, perfect as a side dish.

Ingredients

  • 4 ears fresh corn, husked and cut off the cob
  • 6 slices turkey bacon, chopped
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 small onion, diced
  • 1 teaspoon garlic, minced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large skillet, cook turkey bacon over medium heat until crisp. Remove and set aside.
  2. In the same skillet, add olive oil, diced onion, and bell pepper. Sauté until softened.
  3. Add the minced garlic and corn, and cook for another 5 minutes.
  4. Stir in the turkey bacon, season with salt and black pepper, and heat through.
  5. Serve warm as a side dish.

Notes

  • For a sweeter dish, add a pinch of sugar.
  • Substitute regular bacon for a richer flavor.
