  • 8 ounces elbow macaroni
  • 4 cups beef broth
  • 1 large onion, thinly sliced
  • 2 tablespoons butter
  • 1 teaspoon thyme
  • 1 cup Gruyere cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 4 slices turkey bacon, cooked and chopped
  • salt to taste
  • pepper to taste

Instructions

  1. Cook macaroni according to package instructions. Drain and set aside.
  2. In a large pot, melt butter over medium heat and add sliced onions.
  3. Cook onions until caramelized, about 15-20 minutes.
  4. Add thyme, beef broth, and stir until well combined.
  5. Mix in the cooked macaroni and half of the Gruyere and mozzarella cheese.
  6. Transfer mixture to a baking dish and sprinkle remaining cheese and chopped turkey bacon on top.
  7. Bake at 350°F (175°C) for 20-25 minutes until cheese is bubbly and golden.
