Instructions

  1. In a large bowl, mix the dry ingredients: flour, baking powder, cinnamon, nutmeg, ginger, and salt.
  2. In another bowl, combine the wet ingredients: pumpkin puree, milk, eggs, sugar, and melted butter.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined.
  4. Heat a non-stick skillet over medium heat and pour about 1/4 cup of batter for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with maple syrup and your favorite toppings!
